Orange Blossom Earl Grey Cake with Orange Almond Streusel

Earl grey is arguably one of the BEST flavors to exist. It’s citrus-y and complex, works throughout the seasons, and is such a versatile flavor that you can use in virtually any bake. With that being said, I think it’s even more perfect in a breakfast cake. I mean all cake should be for breakfast, but an earl grey cake for breakfast means you’re going to have a good day.

What does Earl Grey cake taste like?

It’s floral and citrus-y, but not in a way that makes you feel like you’re eating a bottle of perfume. I added some orange blossom and orange zest to complement those floral and citrus-y flavors so it’s quite a delicate and delicious flavor.

Substitutes

If you don’t have orange blossom water, don’t stress! You can still make this with orange or even lemon zest. The orange blossom is a complimentary flavor. I would not sub out the tea for another tea.

Will I taste the leaves of the tea?

Nope! You can’t taste them at all. It just enhances the earl grey flavor.

 

Orange Blossom Earl Grey Cake with Orange Almond Streusel

Prep Time: 20 minutes

Cook Time: 50-55 minutes

Cooling Time: 15 minutes

Total Time: 90 minutes

Equipment: Mixing bowl, Stand mixer/electric mixer, loaf pan, parchment paper

Ingredients:

  • 1 stick of unsalted butter, softened (113 grams)
  • 3/4 cup of white sugar (150 grams)
  • 2 eggs, room temperature
  • 1/4 cup of neutral oil (60 mL)
  • 1/4 cup of sour cream (30 grams)
  • Looseleaf earl grey tea (roughly 3 packets worth)
  • 1/2 tsp of salt
  • 1 1/2 cups of flour (180 grams)
  • 1/2 tsp of baking soda
  • 1/2 tbsp of baking powder
  • 1 tbsp of orange blossom water
  • Zest of 1/2 an orange

Ingredients for Streusel:

  • 1/2 cup of flour (60 grams)
  • 1/4 cup of sugar (50 grams)
  • 1/2 cup of almond flour (28 grams)
  • Zest of 1/2 an orange
  • 1/4 cup of unsalted butter, melted (65 grams)
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350 F.
  2. To a bowl of a stand mixer, add your softened butter and sugar and beat until light and fluffy (~3-5 minutes).
  3. Add in your eggs and oil and beat again until combined.
  4. Add in your orange zest and orange blossom water.
  5. Add in your flour, earl grey tea, sour cream, baking soda, baking powder, and salt and fold in with a spatula.
  6. To make the streusel, add the flour, almond flour, orange zest, and sugar to the melted butter and mix until crumbly.
  7. Add your batter to your prepared loaf pan.
  8. Sprinkle the streusel over the top.
  9. Bake on the lower shelf of the oven for 55-60 minutes. (A toothpick should come out clean when inserted into the cake)
  10. Let cool for 10-15 minutes and enjoy!

Notes:

  1. To store the cake, wrap it in plastic wrap once cooled and keep in the fridge. Warm in the microwave for 10 seconds.
